VINIFICATION, WINE MAKING
Harvested by hand when they are perfectly ripe, the noble variety of grapes (grenache, syrah, mourvèdre) give to the wine a heavy colour, dark rubis with red fruit and moorland aromas. The harvests are enterely by hand, part of wich is picked and placed traditionnaly in small baskets to bring the grapes untouched to the vat which prevents any kind of oxydation and preserves all scents and aromas.

The red wines have been elaborated for numerous generations and are the pride of the domain. From the end of the fermentation, theses wines are pressed, " débourbés ", " liés " and percolated to a perfect clarity then preserved under an inert gaz. After numerous rackings and greatcare, they reach their full maturity.
The rosés " Domaine " or " Château des Adouzes " are obtained by " saignées " (dredging) prepared at low temperatures (15 or 16° celsius). We have chosen to add very little sulfur dioxide in the bottles and this process avoids the " coup de barre " special to the rosé and is good for your health (no stomac ache and head ache !) Because of our method of preparation we can preserve all the aromas and flavours of the fruits and it allows us to control and master the temperatures of the fermentation.

An increasing amount of the red " Château des Adouzes " wines are matured in oak casks, which of course gives us high quality wines. Bottled, these red wines can be reserved for 5 to 12 years, depending on the year of their elaboration. Amateurs of less vigorous wines prefer the traditional wines which can reserved for 5 years. The rosé wines should be kept for a maximum of two years, because of their fresh and fruity character.

Bottling.
The wines are filtered and bottled in our cellars, which of course garantees their authenticity and are then kept for several months in the cellar to complete the bottling process before commercialization.
